Coconut Cake

“I just love this recipe!” said Leigh, one of our Chapel Hill Food Fairies.

“I found this blogger, Sally’s Baking Addiction, and ALL her recipes turn out perfectly.

Leigh was referring to this scrumptious 3-layer coconut cake which appears as perfection and, according to the client who requested this for her daughter’s birthday, it was!

Psst….the secret is out! Local Lindley Mills flour and a triple dose of coconut are the magic in this fairy creation. Coconut milk in the batter along with coconut extract and sweetened coconut flakes (pulsed for a finer texture) make for a wonderfully moist cake which isn’t cloyingly sweet. The slightly tangy part cream cheese buttercream frosting creates the perfect balance to top this cake!

When Leigh’s mom saw this photo she ‘not so subtly’ hinted,

“I love coconut cake!”

Being a loving daughter who adores baking almost as much as she adores her mom, Leigh confessed, “I made her one….one layer that is!”
